Pesarattupma
Pesarattu, a dosa/pancake/crepe made from green gram and raw rice is an Andhra Pradesh speciality. It is served as a snack or for breakfast. Extras such as chili, ginger and onion are added to up the flavor. Instead of urad dal that is added in plain dosa, here moong dal/green gram makes up the protein part. This dosa served with upma filling is called pesarattupma.
Ingredients of Mom's delectable pancake...
Raw rice - 1/4 cup
Moong dal - 1 cup
Yellow split dal (thomara parippu) - 1/2 cup
Fenugreek - a little
Green chili - 1
Shallots - 3
Salt - 1/4 tsp
Rice bran oil - for making the dosa
The modus operandi...
Wash the raw rice well. Souse raw rice, moong dal, yellow split dal in water for 3 hours. Grind soaked ingredients thoroughly to a paste. Add in fenugreek, salt, minced chili and shallots. Add water as required to reach the dosa batter consistency.
Heat a cast iron flat pan. Rub oil lightly on the surface. When the pan
is hot, spread batter in dosa mode and reduce to low flame. Drizzle oil
around the sides of the dosa if you want. After a few minutes, flip
sides. Add a filling of rava upumav inside and serve with coconut chutney and sambar. Indulge!
