Beans stir fry

 Green beans are also called French beans, Haricot beans or snap beans. Here in Kerala, they are usually chopped small and cooked with coconut to make a thoran. This stir fry dish is called beans mezhukuvartti. Coconut shavings is an optional addition.

 




The components of Mom's yummy dish are...

Beans - 200g

Turmeric powder - a bit

Chili powder - a tad

Salt - 1/4 tsp

Water - 1/2 cup

Rice bran oil - 2 tsp

Shallots - 2

Coconut shavings - 2 Tbsp



The method..

Wash the beans well and trim the ends. Cut into 1 inch pieces and also put a slit through the middle of these pieces.

In a cooking vessel, add beans, turmeric powder, chili powder, salt and water. Cook until beans are tender and cooked absolutely.

Chop shallots into small pieces. 

Heat a flat nonstick saucepan and dribble oil. Cast in the shallots and saute for a few minutes. Add in the beans and coconut shavings. Stir fry for 5 to 10 minutes.
