Flax laddoo, No oil, No refined sugar, No dairy, No grain


A truly wonderful recipe I chanced upon, which allows you to enjoy the feeling that you are eating a laddoo sans ghee, sugar and milk. I thought it would be a tedious process, but once you have grated coconut, everything else is 95% chuck in a grinder jar and blitz. 100gms of flaxseed (an important component in the laddoo) has 18gms protein. You can grind the flaxseed into a powder before throwing it into the grinder with the rest of the ingredients, to get a smooth laddoo. Or you could add it as such together with the other components, to get a chewy and crunchy laddoo. Take your pick and give the recipe a try. You will not be disappointed.







The elements of the laddoo are...

Coconut, freshly grated - 1/2 cup

Green cardamom - 5

Flax seeds, organic (ground for a smooth laddoo or whole for a crunchy and chewy laddoo) - 1/4 cup

Dates, pitted - 6

Raisins - 8

Salt - a pinch



The formula...

Toast the coconut on low heat in a pan, stirring oft. 

 

 


 

 

In about 5 minutes, it will slowly start to brown. Turn off heat and set aside to cool. Crush the cardamom with a mortar and pestle. Discard outer pods. Crush the inner seeds to a powder. Keep aside.

 

 


 

 

Cast in coconut, cardamom powder, flax seeds, dates, raisins and salt into a blender jar. 

 

 

 

 

 


 

 

Blend to a coarse (almost fine) paste.

 

 

 



With your palm, make smooth small balls. I got 15. Luxuriate in the cardamom flavor that bursts in your mouth as you take a bite :-)
