Tomato tart

  This baked dish is made from puff pastry. The savory tart is topped with cheese, tomato and a dash of pepper. They can be served as appetizers. I made a round tart, acquiring the shape by using the mouth of a small teacup. A cookie cutter of your desired shape is fine too.

Puff pastry (homemade) - 1/2 (of the pastry dough made from 1 and 1/2 cups flour)

Tomato - 2, small

Cheese, shredded - 6 tsp

Pepper, freshly ground - 1/4 tsp






The steps...

Dust flour on a baking paper, rolling pin and place the puff pastry on the paper. 

 

 

 Gently roll the puff pastry, making sure it is of even thickness everywhere. Once the puff pastry is about a quarter inch thickness all throughout, use a cookie cutter to cut out perfect circles. 

 

 

 

If you use a small cookie cutter, you will get about 6 perfect 'suns' ;-) 

 


 

Top these each with a teaspoon of cheese, a tomato slice and a smidgeon of pepper. 

 

 

 

Place them in the freezer for 5 to 10 minutes before baking.

 

 

Preheat oven to 200C. Bake for 17 to 19 minutes. Allow a few minutes to cool, before you devour these exuberant crusty titbits.
