Hash browns with peas, No oil

Hashed browns made from potato are a staple food in North America. They are usually fried in oil, but this recipe utilizes no oil. It came out as mashed browns ;-)

The elements are...

Carom seeds - a bit

Onion - 2

Garlic - 4 cloves

Potato - 4

Green peas, frozen - 1/4 cup

Salt - 1/2 tsp

Pepper, freshly ground - 1/4 tsp

Water - 1/2 cup

The modus operandi...

Peel potatoes and dice into small cubes. Peel onion and chop into small slices. Peel garlic and mince them. Defrost and wash peas. Microwave peas with a splash of water for a minute in order to cook them.

Warm up a cooking pan. Toast carom seeds. Cast in potatoes and water.

Cover with a lid. Cook on low heat for 5 minutes, stirring once in a while. Remove lid and make sure that the potatoes are cooked. Fling in the cooked peas. Throw in onion and garlic, salt and pepper.

Sautee, again on low to medium heat for 5 minutes or until the raw tang of the onions almost disappear. Don't overcook the onions. The crunch of the onions enhance the taste of the hash browns. Eat up with bread.

The Wall of Silence by Tracy Buchanan

An incredible book. Melissa has a perfect family; with a husband, Patrick who is running for local councillor, twins, Lily and Lewis, and a ten year old daughter, Grace. They live in a small community called Forest Grove, surrounded by forests. But then Patrick gets stabbed in his home and is in coma in hospital. Melissa then realizes that the bubble of perfectness is a farce as it is one of her children who have knifed their father. But none of the children want to divulge who or why it was done. Melissa comes against a wall when she brings it up among her children. She also soon finds out that her marriage is not all that rosy as it seemed. Patrick has been having affairs behind her back. Wade through the book to find out the whodunnit, whydunnit and what happens towards the end :-)
