Pancake, No dairy
Pancakes are a comfort food. A kiddie item; it is usually served with honey, maple syrup, chocolate sauce, jam or with berries like blueberries and strawberries. Ordinarily a thin, round, flat cake, its also called flapjack. My daughter insisted on pancakes for breakfast and we found an easy-peasy recipe. It transpired as fluffy hot cakes!
The elementary building blocks of the griddlecake..
Egg, brown and free-range - 1
Sugar - 2 Tbsp
Almond milk - 3/4 cup
All-purpose flour - 1 cup
Baking powder - 3/4 tsp
Salt - 1/4 tsp
Olive oil, extra virgin - 2 Tbsp
The procedure...
Break egg into a glass bowl. Add in sugar and whisk.
Sieve flour from a slight height into the bowl. Add in baking powder and salt. Pour almond milk in batches while whisking at the same time. You will get a loose batter. Dribble oil and mix.
Heat a flat-bottomed saucepan on medium flame. Using a small ladle (which has a cup shaped end), scoop up pancake batter and spread it on the saucepan. Turn heat to low. When the batter starts to puff up and bubbles form on its surface, flip sides. Cook the underside for a half a minute more.
Plate the almost perfect sun. Indulge with a drizzle of honey :-)
