Aval upumav

 Aval is flattened rice flakes. This upumav is a nice evening snack item.

 


Ingredients of Mom's delicious upumav..

Aval - 2 cups

Onion - 1

Ginger - 1/2 inch

Green chili - 1

Curry leaf - a few

Coconut - 1/2 cup

Rice bran oil - 1 Tbsp

Cashewnut - a handful

Dry grapes - a handful

Raw groundnut - a handful

Bengal gram, split - a few

Urad dal, split - a few

Salt - 1/4 tsp



The method...

Wash aval flakes in a filter. Leave it in the filter for a few minutes so that all excess water drips down.

In a deep-bottomed small pan, drizzle some oil. Fry the cashews, dry grapes and groundnut. Take them out of the oil with a spatula which has holes so that excess oil strains out. Place the fried nuts and grapes on tissue paper. Keep aside.


 

Into the oil, add bengal gram and urad dal. Then add thinly sliced onion, ginger, chili and curry leaves. Saute them for a few minutes Add in coconut and salt. Give it a good stir. Lastly add aval, cashews, grapes and groundnut. Integrate everything. Turn off the heat. Serve hot.
