Mango sorbet, No dairy, No refined sugar




It's mango season here. I bought a kilogram of Lalbagh Sindhura variety online and was in angst when I found the flesh was soft and pulpy. My daughter who loves mangoes ignored them. So the only way to salvage them and still get everyone to eat it was...bingo...Ice cream!  This is a sorbet, a frozen dessert made from mango puree. There are only three ingredients here, so its uncomplicated and straightforward.



The constituents are...
 
 Mango - 3

Cashew - 10

Cold water - 1/4 cup

Dates, deseeded - 3





Soak cashews for about an hour. This will soften them and make it trouble-free to blend.

Peel mangoes and cut slices of its flesh. Fling into blender jar along with cashews, dates and cold water. Blend to a smooth paste.



 
 
 
Scrape with a spatula into a freezer friendly dish and cover. Freeze for 8 hours or overnight.
