Red amaranthus leaf pasta salad, No oil
The red amaranthus leaves from my neighbors garden were fresh and rendered my pasta a pink hue. Hope you try out and like this uncomplicated dish as much as we did :-)
The ingredients are...
Red amaranthus leaf with stalk - a small bunch
Red bell pepper - 1
Cabbage - 100g
Onion - 1
Garlic - 3 cloves
Yeast flakes - 1/2 tsp
Italian seasoning - 1/2 tsp
Salt - 1/2 tsp
Pepper - 1/4 tsp
Water - 1/4 cup + additional for cooking pasta
Pasta - 3 cups
The mechanism...
Boil water with a pinch of salt. Fling in pasta and cook till al dente. Drain the hot water. Wash the pasta in cold water to remove any excess starch. Set aside.
Wash the leaves well. Chop the leaves and stem into small bits. Deseed bell pepper. Cut bell pepper, cabbage, onion and garlic into tiny pieces.
Heat a steel deep-bottomed pan and cast in onion, garlic and a splash of water. Toss around until onion starts to soften and the water reduces. Put in yeast flakes, Italian seasoning, salt and pepper. Stir for a minute. Throw in amaranthus, bell pepper, cabbage and a splash of water. Cook until the water evaporates. The leaves will become smaller and start to stick to the rest of the ingredients. Add in pasta and give it a good mix. Plate it and delight in the healthful salad.
