Carrot and coccina stir fry
Coccinia or ivy gourd grows well in South India. In Malayalam it is called kovakka. It looks like a miniature cucumber. When picking from shops, choose the green, long and slender ones. These will be light green on the inside and are the best ones for cooking. The stouter ones sometimes are overripe and reddish on the inside. Delve in, into the elementary recipe.

Carrot - 2
Coccinia - 200gms
Salt - 1/4 tsp
Rice bran oil - 1 tsp
The process...
Wash the vegetables. Peel carrot. Slice both the vegetables into thin matchstick like pieces. Steam until they are cooked through and through.
Heat a non-stick pan and drizzle oil. Cast in the steamed vegetables along with salt. Sautee for about 10 to 15 minutes. Indulge in the nourishing vegetables with red rice.
