Green amaranthus leaf pasta salad, No oil

The pasta salad has farfalle pasta, the butterfly or bow shaped pasta with ruffled edges. Farfalle is an Italian word which means butterflies. I have also included nutritional yeast in this salad. The golden yeast flakes add flavor and are rich in vitamins and minerals too.





 

The innards...

 

Pasta - 2 cups

Water - for cooking pasta + 1 Tbsp

Amarathus leaf with stalks - 4 or 5

Capsicum, green - 1

Onion - 2, small

Garlic - 4 cloves

Green chili - 2

Salt - 1/4 tsp

Pepper - 1/4 tsp

Yeast flakes - 1/2 tsp


 


 

 

The modus operandi...

 

Boil water with a pinch of salt. When the water starts bubbling, fling in the pasta. Boil until the pasta is cooked undeniably. Strain excess water. Pour cold water onto the cooked pasta to remove the starch. Drain water. Keep the pasta aside for later.

Wash the amaranthus leaves and capsicum well. Chop both into small bits.

 

 

 

 

 

 

 

 

Peel onion and garlic. Mince chili and garlic. Slice onion into thin pieces.

Heat a deep-bottomed steel pan. Throw in onion, garlic, chili and a splash of water. Stir for 5 minutes, till the onions become soft. Cast in yeast flakes, salt and pepper. Mix well. Put in the chopped leaves, stalks and capsicum. Toss around for 5 to 7 minutes. Include the pasta and combine everything. Serve warm!
