Cinnamon coffee cake

 A twist to the regular coffee cake with the addition of a tablespoon of flavored smoky cinnamon coffee powder. It turned out swell! Baked after a special request from my daughter.

The lamp is a Brylle/Jacobsen design. It is a self assembly piece from Ikea. The Scandinavian design is simple, yet functional.

Carrot and coconut stir fry

Carrot is my daughter's favorite vegetable. Maybe because it is crunchy and sweet. Being rich in beta carotene, our body produces Vitamin A from it which helps promote a healthy immune system. So a carrot a day staves off colds and fever. The constituents of Mom's luscious thoran.. Onion - 1 Oil - 2 tsp Carrot - 3 Salt - 1/4 tsp Coconut, grated - 1/2 cup Cumin seeds - 1/4 tsp Turmeric powder - a tad Chili powder - 1/4 tsp Shallots (sambaar ulli) - 3 For the tempering, Oil - 2 tsp Mustard seeds - 1/4 tsp Curry leaf - a few Raw rice - a bit Peel and grate carrots. In a deep-bottomed pan, dribble a little oil and add in thinly sliced onion. Fry for a few minutes. Cast in the carrot and a bit of salt. Cover with a lid and cook on low flame so that the carrot cooks in the steam. Sourdough onion biscuits

Sourdough has been a revelation for me because it is sans any artificial leavening agents like yeast, baking powder and baking soda. It is fermented naturally by the yeast and lactobacilli in the air in my home. A mix of flour and water kept in a container in my kitchen became the base for all my sourdough recipes. It is called a starter and takes about a week to take hold. I have been on a sourdough baking spree ever since my homegrown starter became ripe. Today is biscuit day. Eventhough the recipe called for a pinch of baking powder, I avoided it and the biscuits came out fine. They were crisp on the outside, but surprisingly soft inside. We dunked them in our dinner soup. Ingredients for the biscuits are : Onion - 1, medium size, peeled Organic jaggery - 25 gms All purpose flour - 120 gms Salt - 3/4 tsp Oregano, dried - 2 Tbsp Olive oil - 20 gms Sourdough - 227 gms Thinly slice the onion.  In a saucepan on medium heat, add 1 Tbsp oil.
