A mountain of coconut shavings of two coconuts produced by yours truly, using a cherava (coconut scraper). We have a thengukaran (coconut tree climber) who comes by once a month to take down the coconuts from the trees. He also chops down the dry coconut leaves. So when he is visiting, there are a lot of thumping sounds as these fall on the ground. You sit on the seat of the cherava and grate to get the coconut shavings.
Prawns is a popular sea food. The ingredients required to prepare this dish : Prawns, deveined and deshelled - 250 g Onion - 1 Green chili - 3 Ginger - 1/4 inch Garlic - 3 cloves Tomato - 2 Salt - 1/4 tsp Garam masala - 1/4 tsp Coriander powder - 1/4 tsp Turmeric powder - 1/4 tsp Water - 1/4 cup Clean the prawns under running water. Coat them with salt, turmeric powder, garam masala, coriander powder, salt and refrigerate overnight. Slice onion, chili, garlic, ginger and tomato into thin pieces. Toss in onion, ginger, garlic and chili into a pan, along with a splash of water. Allow them to soften, over 5 minutes. Add in the diced tomato. After a few minutes, throw in the marinated prawns. Let it cook on slow heat for 10 to 15 minutes. Once the prawns is fully cooked, turn off the heat. Serve with roti and enjoy!
Brown rice - 1 cup Water - 2 cups Olive oil Salt Pepper Red chili flakes Turmeric powder Pumpkin - 1/4, peeled and deseeded French beans - 15 or 16, ends trimmed Frozen peas - 1 and 1/2 cup, thawed Chicken breast - 1/2 cup, shredded Coriander leaves - a few Wash rice thoroughly in two or three changes of water. In a pressure cooker, add rice and water. Add 1/2 tsp salt and a drop of oil. Cover. Cook until soft and the water has evaporated. Keep aside. Clean vegetables. Dice pumpkin. Slice french beans into 1 inch pieces. Place pumpkin and french beans in a baking tray. Drizzle 1 tsp oil. Add a pinch of turmeric powder, 1/2 tsp pepper, 1/2 tsp red chili flakes and 1 tsp salt. Toss so that the vegetables are evenly coated with oil and spices. Preheat oven to 200C. Roast vegetables for 30 minutes. Every ten minutes, take tray out of oven and toss the vegetables.
