Sponge cupcakes with frosting

These are Victoria sponge cake with whipped cream. I bought store-bought whipped cream and whipped a quarter cup cream to stiff peaks. Place the bowl with cream in another bowl with ice while whipping. This helps prevent the cream from melting.
Once the cupcakes have cooled, use a nozzle to decorate the cakes with a swirl of whipped cream. Go a bundle on the frosted cakes.
Barbara O'Neal's "The Lost Girls of Devon" is a beautiful story of love, forgiveness, motherhood and youth. Its about three generations of women in a family and the weave of tangles between them. Lillian lives in an old manor in Devon. She raised her granddaughter Zoe when her mother, Poppy left her when she was seven. Zoe has grown thinking that her mother is never going to come back. Poppy does come back after a spiritual journey, but Zoe is unable to forgive her and hates her. Zoe's daughter, Isabel is suffering from depression and anxiety after her close friends posted nude pictures of her in social media. She is undergoing therapy and has not revealed what has happened to her to anybody, even her mom and therapist. Lillian is ageing and suffering from occasional dementia. The web of emotions between the women and what they experience is beautifully expressed. Hope you enjoy the story as much as I appreciated it.
