Potato and spring onion sandwich
A sourdough sandwich of potatoes cooked with spring onions and spices is a go-to breakfast for the weekends.
The constituents are..
Spring onion - 1 stalk with leaves
Potato - 3
Coconut oil - 1 Tbsp
Cumin seeds - 1/4 tsp
Salt - 1/4 tsp
Coriander powder - 1/2 tsp
Kashmiri chili powder - 1/2 tsp
Garam masala - 1/2 tsp
The technique...
Pressure cook potatoes with water and a pinch of salt. Allow to cool, peel and discard skin. Smash them with the back of a fork.
Heat a saucepan with oil. Throw in cumin seeds and thinly chopped spring onions. After a few minutes, add in salt, coriander powder, chili powder and garam masala. Stir for two minutes. Cast in potatoes. Toss around to coat the potatoes with the masalas. Cook on low heat for 10 minutes, stirring oft.
Cut slices of sourdough bread and stuff the insides with the potatoes. Whoop it up!
