Sourdough oats pumpkin cake

 Again, oatmeal wins (100g in) :-) My daughter wanted a cake, so I transferred some of the bread batter into cupcake covers. And announced that I had baked pumpkin cake ;-)  The mini cakes were done in 20 minutes.

And the loaf cake took another 10 minutes more..

 Baked oats is doing the rounds in Tiktok and Instagram. So I thought I would give it a go. The constituents... Rolled oats - 1 cup Baking powder - 1/2 tsp Banana - 1 Dates, pitted - 3 Salt - a smidgeon Almond milk - 1/2 cup Raisins - a few Sunflower seeds - a little The mechanism...   Grind oats to a powder. Slice banana into small pieces. Throw in baking powder, banana, dates, salt and almond milk into the grinder jar along with the oats.          Blitz for a few seconds so that everything is blended well. Line a baking dish with baking paper. Spoon in the oats dough into the baking dish. Sprinkle with raisins and sunflower seeds.         Preheat oven to 180C. Bake for 25 minutes.            Serve with a drizzle of grated coconut. Relish it warm.

Salad with cucumber, tomato and onion

This is the most basic of all salads and it is quick to conjure. The only juncture to twiddle your thumb is when the onions are soused in vinegar. This is done in order to take away its bite and strong odor. The components of the overly simplified salad are... Onion - 1 Cucumber - 1 Tomato - 1 Apple cider vinegar - 2 tsp Salt - a smidgeon The procedure... Peel onion and cucumber. Slice onion, cucumber and tomato into small pieces.                        Douse the onion bits with vinegar and set aside for an hour. Drain vinegar. Combine with cucumber and tomato. Add in salt and give it a good stir. Enjoy as a side dish to pulao, biriyani and fried rice.

Soba noodle soup

Soba is Japanese noodles. This soup I made is chicken soup with a few noodle strands floating in the broth. If you cook the noodles along with the chicken and carrot, it will absorb the broth.  Talking about soba and Japan, there is an excellent book called Ikigai, which is the Japanese secret to a fulfilling life. I remember enjoying it. Ingredients for the soup are  Soba noodles - a few Chicken breasts - 2, cubed Carrot - 2, peeled and cubed Salt - to taste Pepper - 1 tsp Water - 4 cups Olive oil - 1 tsp Ginger - 1/2 inch, peeled and thinly chopped Garlic - 4 pods, peeled and thinly chopped Boil noodles in water till it swells up and becomes soft. Strain and keep aside. Clean chicken and cook in pressure cooker for 3 whistles. Open lid of cooker, add 3 cups of water, carrot, salt and pepper. Cook on slow flame, 15 to 20 minutes without lid.
