Chickpeas curry with potato and celery

An absolutely ravishing curry with quinoa, rice or parotta. I partnered it with quinoa and on the next day, with parotta. Yummmm!

The illusive (but obvious in the taste) ingredients are..
Olive oil - 2 tsp
Carom seeds - 1/2 tsp
Curry leaves - a handful
Onion - 2, medium
Green chili - 1
Ginger - 1"
Garlic - 5 or 6 cloves
Tomato - 2, small
Salt - 1/2 tsp
Turmeric powder - a pinch
Coriander powder - 1/4 tsp
Kashmiri chili powder - 1/4 tsp
Chicken masala - 1/2 tsp
Water - 1/4 cup
Chickpeas - 2 cups, soaked overnight
Potato - 2, small
Celery - 2 or 3

The magical way in which the delightful dish is made...
Pressure cook chickpeas with water and a pinch of salt. Drain water and keep aside.
Heat a saucepan and add oil. Add carom seeds and after a few seconds, add curry leaves. Then add thinly sliced onion, minced chili, ginger and garlic. Stir around for about 5 minutes. Add roughly chopped tomato. After a minute or two, add spices. Stir for 2 minutes and turn off heat. Leave aside to cool.
Grind to a rough paste.
In the saucepan, add boiled chickpeas, cubed potato and ground masala. Add water too. Stir well, cover and cook for 10 minutes until the potatoes become soft. Add chopped celery stalk and leaves. Stir to combine. Serve warm.

The chickpeas dish is on my kitchen worktop along with the latest story I completed :-) John Marrs "What Lies Between Us" is a heartstopper. I had to take breaks after reading some passages as I was not sure I could continue. Some scenes are emotionally challenging, but I liked reading an out of world book (I hope nothing like this happens to anyone in real life).
