Tuna and zucchini stir fry
Stir fry in malayalam is called ullathu. So this would be a tuna and zucchini ullathu. I prepared the dish in less than 45 mins. More time is spent in sauteeing the onion, ginger, garlic and spice mix. The rest are just a "throw in" ;-)
The special ingredients are..
Olive oil - 2 tsp
Carom seeds - 1/2 tsp
Curry leaves - a handful
Onion - 2, peeled
Green chili - 1
Ginger - 1", peeled
Garlic - 5 or 6, peeled
Salt - 1/4 tsp
Turmeric powder - a pinch
Kashmiri chili powder - 1/4 tsp
Coriander powder - 1/4 tsp
Chicken masala - 1/2 tsp
Tuna - 2 small cans (tuna chunks in brine)
Green zucchini - 1, peeled
Celery - 3 sticks
Strain out the saltwater from the tuna cans and shred the tuna chunks. Keep aside.
Heat a saucepan and add oil. Add carom seeds and after a few seconds add curry leaves. Then add thinly sliced onion, minced chili, garlic and ginger. Stir for about 5 minutes on low heat or until the onion becomes soft. Add spice powders and salt. Stir for a few minutes so that the masalas coat the onion, ginger and garlic. Add tuna and thinly sliced zucchini. Add roughly chopped celery stalk and leaves. Stir well to combine evenly. Cook on low heat for about 5 more minutes.
Serve with hot steaming brown rice.
