Chicken lollipop

Chicken lollipop was always a take away order for my daughter. Now that I am cooking more ascompared to take away and eat outs, I knew I could brighten her day by making this. So I googled chicken lollipop recipe. I grilled the marinated drumsticks first and then rubbed the ground masala on the meat.

The marinade included..
Salt - 2/4 tsp
Turmeric powder - a pinch
Kashmiri chili powder - 1/4 tsp
Pepper - 1/4 tsp

Clean the drumsticks well and coat with the above marinade. Refrigerate for 1 or 2 hours. Now you need to drizzle some olive oil on a flat baking dish. Grill for 25 minutes, tossing the chicken gently once or twice in between so that all sides are evenly grilled. Keep aside. The next step is to prepare the masala. This requires..

Olive oil - 1 tsp
Carom seeds - 1/4 tsp
Onion - 1
Ginger - 1"
Garlic - 4 or 5 cloves
Green chili - 1
Tomato - 1
Salt - 1/4 tsp
Kashmiri chili powder - 1/2 tsp
Coriander leaves - a few

You are probably familiar with the homemade masala steps by now. Anyways, here goes....Heat a saucepan with oil. Add carom seeds. After a few seconds, add chopped onion, minced chili, garlic and ginger. Sautee until onions become soft and fragrant. Add chopped tomato and stir for a few minutes. Add salt and chili powder. Stir for 2 or 3 minutes more. Sprinkle coriander leaves and keep aside to cool.

Grind to a fine paste. Transfer the drumsticks to the saucepan. Keep on low heat. Coat the meat part with the masala. Keep covered with a lid and cook for about 5 minutes. This is to make sure that the chicken is well done. You can also test it by attempting to cut the meat with a spoon. If the meat comes off easily, its done.
Transfer to a serving plate. Scoop up all the leftover masala from the saucepan and spoon it on top of the chicken meat. Decorate with coriander leaves.

 Enjoy alongside rice :-)
