Egg fried rice

This dish has a number of vegetables (beans, carrot, tomato, peas, corn) and egg. Last weekend, when we visited the local club to exchange books, we also bought a food parcel; of egg fried rice. My kid loved it. I was planning to make veg fried rice today, when she said 'amma, make egg fried rice'. So here goes my own creative recipe. I add chicken masala for flavour, you can add any masala of your choice.

Ingredients are
Brown rice - 1 cup
Water - 2 cups
Lemon - 1/2

Beans - 250 gms
Carrot - 2, peeled
Peas - 100 gms
Corn - 100 gms
Tomato - 1
Garlic - 4 pods, peeled
Salt - 2 tsp
Pepper - 1/4 tsp
Turmeric powder - a pinch
Red chili flakes - 2 tsp
Chicken masala - 1 Tbsp

Organic eggs - 4
Olive oil - 2 Tbsp

Wash the rice in two changes of water. Add the 2 cups of water, half a tsp of salt, a drop of oil and squeeze the juice of half a lemon into the rice. Cook.

I used frozen peas and corn. Allow to thaw in room temperature and wash it once. I soaked the beans and carrot in salt water for sometime, so that they are clean and crisp. Chop beans and carrot into small pieces. Microwave beans and carrot in little water for 5 to 6 minutes. In the last minute, add peas and corn. Keep aside. Drain any excess water.

Chop tomato roughly. Slice garlic into thin pieces.

In a saucepan, add 1 Tbsp of oil. Break the eggs. Add a pinch of turmeric powder, 1/4 tsp salt, 1/4 tsp pepper, 1 tsp red chili flakes. Sautee until the scrambled egg is cooked. Keep aside.

In the same saucepan, add 1 Tbsp of oil. Once it heats up, add garlic. Sautee for a minute. Add tomato. Stir around. Add 1 tsp of salt, a pinch of turmeric, 1 tsp red chili flakes and 1 Tbsp chicken masala. Fry the spices and masala on low heat for half a minute. Add the vegetables. Stir so that the spices coat the vegetables. Add cooked rice and scrambled egg. Stir to mix. Add additional salt if required.

Tuck it in with some homemade yogurt!
