Ladies finger fry

Okra or ladies finger is called bhindi in Hindi. One has to choose the small, tender okra whose ends snap easily and not the thick, dry ones. Bhindi masala is an in demand dish in Indian restaurants abroad. I noticed this in my restaurant visits in Sweden whenever I missed home food :-)

The elements of Mom's superb stir fry....

Ladies finger - 15

Salt - 1/4 tsp

Turmeric powder - a smidge

Chili powder - 1/2 tsp

Coriander powder - 1/2 tsp

Garam masala - 1/2 tsp

Water - a splash

Rice bran oil - 2 tsp

The mechanism...
Clean ladies finger and trim the ends. Slit them through the middle, but not completely.
Put together salt, turmeric powder, chili powder, coriander powder, garam masala and water into a paste. Rub these on the slit edges of the vegetable.
Heat up a flat bottomed saucepan and mizzle oil. Shallow fry the vegetables until they are cooked to the core. Serve with hot chapati. Delight in the different flavors as you bite into the ladies finger!
