Amaranth leaves in lentil curry

The curry is called cheera parippu curry in Malayalam and dal palak in Hindi. Its an absolute stunner side dish with chapati or rice.

The ingredients of Mom's amazing curry...
(1). Amaranth leaves (cheera) - a small bunch
Green gram split (moong dal) - 1 cup
Salt - 1/4 tsp
Water - 1/2 cup

(2).For the grind (arappu),
Coconut - 1/2 cup
Cumin seeds - a soupcon
Shallots - 2

(3)For tempering,
Rice bran oil - 1 tsp
Mustard seeds - a pinch
Red chili, dry - 1
Curry leaf - a handful
The method...
Boil the lentils with water and a tad of salt. Drain excess water and set aside. Chop amaranth leaves into very small pieces.
Grind all the ingredients in (2).
Warm up a saucepan and add all the items in (3) to prepare the seasoning. Fry them for a few minutes. Cast in the leaves, ground coconut amalgam, water and combine. Add in cooked lentils and salt. Stir to incorporate. Serve with hot red rice and get a buzz out of it.
