Puri
Puri is made almost from the same dough as chapati, except for a few extra additives. And it is deep-fried. Just like bhatura. We had puri with channa masala. The small oval shaped puris are the ones rolled by my daughter.
Wheat powder - 3 cups
All-purpose flour - 1/2 cup
Rava - 2 Tbsp
Vegetable oil - 1 tsp
Water
Vegetable oil for frying
In a bowl, mix all the ingredients for dough. Add just enough water to make a soft, but not sticky dough. Cover and keep aside for half an hour.
Make small balls with the dough. Sprinkle little wheat flour on work surface. Pat dough into round shapes with a rolling pin.
Heat a deep-bottomed frying pan. Add oil for frying. When it becomes really hot, slide the round dough shapes inthe pan. Flip it gently so that both sides cook and the puri bubbles up. Serve hot.
