Cupcakes (eggless) -- Kids food

My childs love for the pink color, makes me try beetroot in the dishes that I make.

You get spices like cinnamon, saffron .. in liquid form in small bottles in baking shops. They add flavor and a nice aroma to the cakes. Also, this recipe makes use of fresh cream; no butter and no eggs. I use the cream separated from the milk we boil for the family.

Beetroot grated - 1 Tbsp
Hersheys cocoa powder - 2 Tbsp
Saffron - 2 drops
Cardamom - 1 drop
Cinnamon -  1 drop
Ginger - 1 drop
Tutti frutti (candied fruits)- a handful

Add the spices to the sugar and cream mix.

Once you get the final batter, separate into two bowls. In one, add beetroot and in the other, cocoa. Beat both the mixtures well, and pour into the cupcake tins.

Top off with some colorful tutti frutti. As a variation, you can add a layer of pink and then chocolate batter, to arouse your little ones interest. Bake for about 20 minutes.
